Family-Friendly Fare: Kid-Approved Recipes the Whole Family Will Love

Feeding a family can be a challenge, especially when you have picky eaters in the mix. But fear not! In this post, we’ll share some kid-approved recipes that are sure to please even the pickiest of eaters. These delicious and nutritious meals will not only satisfy little appetites but will also leave the whole family asking for seconds.

  1. Mini Veggie Pizzas:

Ingredients:

– English muffins, split

– Tomato sauce

– Shredded cheese

– Assorted chopped vegetables (bell peppers, mushrooms, tomatoes, etc.)

– Optional toppings: sliced olives, sliced pepperoni, etc.

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Place the English muffin halves on a baking sheet.
  3. Spread a spoonful of tomato sauce over each muffin half.
  4. Sprinkle shredded cheese over the sauce, and let your little ones help choose their favorite toppings and add them to their mini pizzas.
  5. Bake for about 10-12 minutes or until the cheese is melted and bubbly. Let cool a bit before serving.
  6. Baked Chicken Tenders:

Ingredients:

– Boneless, skinless chicken tenders

– Flour

– Eggs, beaten

– Breadcrumbs

– Salt and pepper to taste

– Dipping sauces (ketchup, honey mustard, BBQ sauce, etc.)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs (seasoned with salt and pepper).
  3. Dip each chicken tender into the flour, then into the beaten eggs, and finally coat with breadcrumbs.
  4. Arrange the breaded chicken tenders on a baking sheet.
  5. Bake for about 15-20 minutes or until golden brown and cooked through.
  6. Serve with your kids’ favorite dipping sauces.
  7. Veggie Fried Rice:

Ingredients:

– Cooked rice (preferably chilled or day-old)

– Mixed vegetables (carrots, peas, corn, etc.)

– Diced tofu or cooked chicken (optional)

– Soy sauce

– Sesame oil

– Scrambled eggs (optional)

– Green onions, sliced for garnish

Instructions:

  1. In a large skillet or wok, heat a drizzle of sesame oil over medium heat.
  2. Add the mixed vegetables and cook until tender-crisp.
  3. If using tofu or cooked chicken, add it to the skillet and cook until heated through.
  4. Push the vegetables to the side of the skillet and add scrambled eggs (if using) to the other side. Cook until scrambled and set.
  5. Add the chilled rice to the skillet and drizzle with soy sauce. Stir-fry until the rice is heated through and well-coated with the sauce.
  6. Serve the veggie fried rice hot, garnished with sliced green onions.
  7. Mini Meatball Skewers:

Ingredients:

– Ground beef or chicken

– Breadcrumbs

– Grated Parmesan cheese

– Egg – Parsley or other herbs, chopped

– Garlic powder

– Salt and pepper to taste

– Wooden skewers

– Ketchup, BBQ sauce, or other dipping sauces (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together ground beef or chicken, breadcrumbs, Parmesan cheese, egg, herbs, garlic powder, salt and pepper until combined.
  3. Using wet hands, form small meatballs (about 1 tablespoon of the mixture) and thread them onto wooden skewers.
  4. Place the skewers on a baking sheet and bake for about 15 minutes or until cooked through.
  5. Serve place them onto a baking sheet.
  6. Bake for about 10 minutes or until the meatballs are cooked through.
  7. Let the meatballs cool slightly, then thread them onto wooden skewers and serve with ketchup, BBQ sauce, or other favorite dipping sauces.
